Lemon-Lime Sea Salt 

Infusing salt with lemon and lime zest allows you to add a sunny, citrus flavor to your food for weeks to come. Follow these simple steps and you will soon be sprinkling citrus salt on grilled fish, fresh tomato bruschetta and crisp summer salads.

Yield:  1 cup

Preparation time:  10 minutes

Baking time: 60 minutes

1 cup coarsely ground or flaked sea salt
1 tablespoon lemon zest*
1 tablespoon lime zest*

Preheat the oven to 225 degrees Fahrenheit. Line a baking sheet with parchment paper.

In a small bowl, stir together the salt, lemon zest and lime zest. Pour the salt into two slightly mounded piles that run the length of the baking sheet.

Bake for 60 minutes, or until the salt and the zest start to brown slightly. Remove from the oven, let the salt cool on the baking sheet.

You can leave the salt coarse, or transfer it to a food processor or spice grinder and pulse until ground fine. Transfer to an airtight container and keep for up to 2 months.
