Spicy Citrus Marinade for Grilled Chicken
Celebrate the first day of summer by adding new flavors to your grilled chicken! Spicy, sweet and tangy — this lemon and lime marinade has everything you need to kick off a season of delicious food.
Yield: Marinade for about 4 pounds of chicken
Preparation: 40 minutes
½ cup fresh lime juice*
½ cup fresh lemon juice*
¼ cup fresh cilantro
2 cloves garlic, peeled
1 jalapeno, stem removed**
2 tablespoons brown sugar
1 teaspoon salt
4 pounds chicken pieces
Lemon and lime wedges*
Add the lime juice, lemon juice, cilantro, garlic, jalapeno, brown sugar and salt to a blender. Puree until smooth, about 15 to 20 seconds.
Place the chicken in a large pan, at least 11 x 13 inches. Pour the marinade over the chicken and turn the pieces to coat. Cover with plastic wrap and place in the refrigerator for 30 minutes, turning the pieces once after 15 minutes.
Heat the grill to about 450 degrees Fahrenheit. Arrange the chicken on the grill and cook for about 30 to 35 minutes, turning two to three times once it has seared. Cook to an internal temperature of at least 165 degrees Fahrenheit. Serve with lemon and lime wedges.
*We recommend using lemons and limes from Paramount Citrus. They are consistently fresh and juicy and available at most major grocery, mass and club retailers.
**If you like your marinade a little less spicy, remove the seeds and ribs from the jalapeno before adding it to the marinade ingredients.
