Summer Potato Salad with Lemon Parmesan Dressing
This potato salad is sure to be the star at your next picnic. Lemon juice and zest make a tangy dressing that is balanced by the salty flavor of freshly grated Parmesan cheese. It makes a versatile side dish that can be served warm or cold.
Yield: 6 servings
Preparation: 15 minutes
2 pounds red or white new potatoes, cooked and quartered½ cup chopped roasted red pepper½ cup diced onion2 cloves garlic, grated4 tablespoons grated Parmesan cheeseJuice of 2 lemons*Zest of 1 lemon*2 teaspoons extra virgin olive oil2 teaspoons chopped fresh basil½ teaspoon salt¼ teaspoon ground black pepper
Place the potatoes in a large bowl and add the red pepper, onion and garlic. Stir to mix all ingredients.
In a small bowl, stir together the Parmesan cheese, lemon juice, lemon zest, olive oil, basil, salt and pepper. Pour the dressing over the potatoes and stir to coat all ingredients.
Serve warm, or refrigerate for at least 1 hour before serving cold.
