Summer Citrus Cucumber Salad

This light, refreshing cucumber salad is dressed with a lemon and lime vinaigrette that adds a burst of summer flavor. Enjoy it as a side dish at your next cookout, or finely chop the vegetables and use it as a fresh relish for grilled hot dogs.

Preparation time: 10 minutes
Refrigeration time: 30 minutes

2 medium cucumbers, peeled and chopped
1 small red bell pepper, chopped
1 green onion, white and greens thinly sliced
1 clove garlic, minced
Juice of 1 lemon*
Juice of 1 lime*
1 teaspoon extra virgin olive oil
1 teaspoon sugar
½ teaspoon salt
1/8 teaspoon ground black pepper

In a medium-size bowl, stir together the cucumber, bell pepper, green onion and garlic.

In a small dish, whisk together the lemon juice, lime juice, olive oil, sugar, salt and black pepper.

Pour the dressing over the vegetables and stir to coat all ingredients. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to blend.
