Heirloom Tomato Salad with Lemon Dijon Dressing  

Enjoy the final days of tomato season with this colorful salad. The sweetness of plump heirloom tomatoes is paired with a tangy lemon dressing to create a side dish simple enough for an afternoon lunch alone, but elegant enough for dinner party.

Serves: 4

Preparation time: 10 minutes

4 medium heirloom tomatoes, sliced
Juice of 2 lemons*
1 tablespoon extra virgin olive oil
1 tablespoon freshly grated Parmesan cheese
2 teaspoons prepared Dijon mustard
Pinch of salt and ground black pepper (to taste)
Basil leaves for garnish
Lemon slices for garnish*

Arrange the tomato slices on a serving platter. In a small dish whisk together the lemon juice, olive oil, Parmesan cheese, mustard, salt and pepper.

Pour the dressing over the tomatoes. Garnish with basil leaves and lemon slices before serving.
